10 ways to more VEGGIES

1. Stir Fry or Omelette with colorful bell peppers, onions, spinach
2. Add spinach/kale to your protein shake (the shake might look green but it doesn’t alter the taste)
3. Make your salad sexy: shredded carrots, Brussel sprouts, radishes, cabbage, parsley, + arugula
4. Soups and chilis are an easy way to “hide” the vegetables you’re trying to eat. Add some carrots, peas, bell peppers, zucchini, and celery
5. Buy precut: If you’re short on time, try buying some pre-cut vegetables or chop them all up ahead of time on the weekend so you can munch on them throughout the week. The more convenient you can make it, the more veggies you’ll eat.
6. Turn it into a noodle: zucchini noodles, carrots, yellow squash, turnips or beets are great ways to load up the nutrients.
7. Stuffed Spaghetti Squash from chicken pesto base to a taco style. This is an easy one with tons of fiber and adds volume to your meals.
8. Turn them into fries: zucchini, eggplant, jicama, carrots are all delish and you can sprinkle Parmesan or use Bragg’s Nutritional Yeast to add flavor. And definitely don’t forget to try different herbs + spices
9. Add them into your meatloaf or meatballs: diced carrots, and peppers, mushrooms
10. Stuffed: tomatoes, eggplant, peppers, acorn squash, zucchini, + mushrooms
