CAJUN AIR FRIED SHRIMP

INGREDIENTS

  • 1 tablespoon Cajun or Creole seasoning

  • 24 (1 pound) cleaned and peeled extra jumbo shrimp

  • 6 ounces fully cooked Chicken Sausage, sliced

  • 1 medium zucchini, 8 ounces, sliced into 1/4-inch thick half moons

  • 1 medium yellow squash, 8 ounces, sliced into 1/4-inch thick half moons

  • 1 large red bell pepper, seeded and cut into thin 1-inch pieces

  • 1/4 teaspoon kosher salt

  • 2 tablespoons olive oil


INSTRUCTIONS

  1. In a large bowl, combine the Cajun seasoning and shrimp, toss to coat.

  2. Add the sausage, zucchini, squash, bell peppers, and salt and toss with the oil.

  3. Preheat the air fryer 400F. In 2 batches (for smaller baskets), transfer the shrimp and vegetables to the air fryer basket and cook 8 minutes, shaking the basket 2 to 3 times. Set aside, repeat with remaining shrimp and veggies.

  4. Once both batches are cooked, return the first batch to the air fryer and cook 2-3 minutes

Buttermilk Chicken

INGREDIENTS

  • 4 large sliced thin chicken breast

  • 1 cup 1% buttermilk (Dairy Free: Lemon juice. Add one to two tablespoons lemon juice to a plant-based milk alternative (such as soy milk or almond milk) to measure one cup. Stir the mixture, let it stand for five to ten minutes or until thickened (aka curdled) and you’re good to go)

  • 1 1/2 teaspoons dried parsley

  • 1 1/2 teaspoons fresh or dried chives

  • 3/4 teaspoon kosher salt

  • 1/2 teaspoon dried dill

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon garlic powder

  • Coconut Oil Spray


INSTRUCTIONS

  1. Place the chicken in a bowl and pour the buttermilk over, covering completely. Set chicken at room temperature at least 20 minutes or refrigerated up to 4 hours.

  2. Meanwhile in a bowl combine the remaining spices.

  3. Remove the chicken from the buttermilk, letting the excess drip off, then sprinkle the seasoning mix over the top and let it stand 5 minutes until it soaks in.

  4. Spray the top of the chicken with oil.

  5. Cook at 300F for 10 minutes then increase the heat to 350F and cook for an additional 20-25 minutes depending on thickness of chicken

Parmesan Basil Crusted Salmon


INGREDIENTS

  • Coconut oil spray

  • 4 salmon fillets, skin removed, about 5 ounce each

  • 1/2 lemon

  • 1/4 teaspoon Kosher salt

  • Freshly ground black pepper

  • 3 tablespoons Primal Kitchen Mayonnaise

  • 6 fresh basil leaves, minced, plus more for garnish

  • 3 tablespoons grated Parmesan or Romano cheese (Dairy Free: I like to use Nutritional Yeast as a grated cheese alternative)


INSTRUCTIONS

1. Preheat air fryer to 400F. Spritz the basket with olive oil.

2. Season the salmon with lemon juice, salt and pepper. 3. Mix the mayonnaise with basil and 2 tablespoons Parmesan cheese in a small bowl. 4. Spread completely over the top of salmon. Sprinkle remaining Parmesan cheese on top. 5. In batches, air fry 7 minutes, or longer depending on thickness of the salmon.
