Muscle Meatloafs

INGREDIENTS
• 2-3lb grass fed ground beef or ground turkey
• 1 tablespoon of coconut oil
• 1/2 cup small onion chopped
• 1 green bell pepper, diced
• 1 tsp. onion powder
• 4 Tbsp. coconut aminos
• 4 large egg whites
• 1 cup gluten free oats (uncooked)
• 1/4 cup ketchup
• Salt/pepper as desired
• 3/4 cup low sodium chicken broth
DIRECTIONS
1. Preheat oven to 350°F. and spray a muffin tin.
2. Place ground beef in a medium bowl and set aside.
3. Melt 1 tsp. coconut oil in a small skillet over medium heat. Add onions, bell pepper, and garlic and sauté, stirring occasionally, until the onion starts to soften and the garlic is fragrant.
4. In a large bowl, add mixture of ground beef. Add ketchup, salt/pepper, egg whites, coconut aminos, oats, chicken broth, onion powder. Using your hands or a spoon, mix well to combine.
5. Divide meat mixture evenly among a muffin pan.
6. Bake in preheated oven for 20-25 minutes or until meat is no longer pink in the center.
7. Drizzle with ketchup or mustard!
