Protein Blondies

This recipe is also plant based (swap protein powder for vegan protein powder or try without)


INGREDIENTS

  • 1 15 oz can chickpeas, rinsed

  • 1 Teaspoon Vanilla

  • 1.5 scoop Vanilla Protein Powder (used the Lifetime Fitness Vanilla Collagen, but you can use Whey as well)

  • 1 Teaspoon Cinnamon

  • 1/4 cup Oat Flour or Almond Flour

  • 1/4 Teaspoon Salt

  • 1/4 Teaspoon Baking Powder

  • 1/3 Cup Maple Syrup

  • 1/2 cup Almond Butter

  • 1/2 cup Chocolate Chips

INSTRUCTIONS

1. Preheat oven to 350F.

2. In a food processor, blend chickpeas, almond butter, vanilla, vanilla protein, and maple syrup until smooth 3. Once blended, add in oat/almond flour, cinnamon, baking powder, and salt and blend again. 4. Once creamy and smooth, take off lid and stir in chocolate chips. Do not process chips 5. Pour into greased 8x8 pan and bake for 22-24 minutes
