Tzatziki Chicken

INGREDIENTS

• 1 lb. cooked chicken
• 1/2 cup plain Greek yogurt
• 1 medium cucumber, chopped
• 2 cups cherry tomatoes, halved
• 1/2 red onion, finely chopped
• Juice of 1 lemon
• 6 oz. feta cheese, crumbled
• 1/2 cup kalamata olives, chopped
• 3 cloves garlic, minced
• 2 Tbsp. fresh dill, chopped
• 2 Tbsp. parsley, chopped
• Salt and pepper, to taste
DIRECTIONS
1. Add all ingredients to a bowl and stir until thoroughly mixed. Serve over mixed greens, quinoa, or cauliflower rice.
